I stole this idea off a website and now I can't remember which one--some kind of psychic/spiritual website that you wouldn't expect to have recipes--I was just Googling "eggplant pizza" and found it in the "images" bar. The gist is that instead of using crust, you use slices of eggplant. Go thinner than 1/2", but not quite as thin as 1/4", and find a way to get the slices oiled evenly without using too much--some of my slices ended up doused in oil and others were completely without... without oil, dry-baked eggplant just tastes like a green sponge. Pre-cook the oiled slices a bit, top them with whatever, and you're good to go:
I think they cooked at 375 for 15 minutes, but I don't remember. My favorite topping combos were spinach and cheddar, pizza sauce and olives, and marinated artichoke and cheddar. I tried to plate a few in a cute way, but the lighting really is SO bad:
