I'm always looking for recipes that are interesting but also healthy, and this one definitely fits the bill. Spinach, eggs, avocados, and chickpeas are four of the healthiest things you can eat, and here they all are in one bowl.
The cookbook (Easy Vegetarian, from Williams Sonoma) actually gives long-winded preparation instructions, but it's a pretty straight-forward salad. Top raw baby spinach with slices of avocado and hard-boiled eggs and as many chickpeas as you can stand (they're delicious, but long-winded themselves, if you know what I mean). Over all of that, sprinkle as much paprika as you want. This much is about right:
The book gave a recipe for a "creamy chive" dressing to top this salad, but it was hardly creamy, and I can't stand chives, so I left them out. Also, it spoiled the appearance of the salad:
Instead, just top it with lemon juice, olive oil, and salt and pepper as I did the very next day when I made this salad again:
I was especially pleased with the addition of paprika to salad. I'm trying it on just about everything now. It's not just for deviled eggs, people!!
