#24. New Potato Salad with Gazpacho Dressing


This was a pleasant lunch for a warm day. I wouldn't say it was great, but it was a little better than edible. It made me think of going to one of my grandmother's catered charity luncheons and getting in the car afterwards and wiggling out of my pantyhose and saying to my mom, "Well, the food wasn't great, but that potato thing was okay. I filled up on that."

I'm not going to put the recipe because I'm lazy, but this is yet another from the Williams Sonoma book Easy Vegetarian (I need to branch out a bit more!). It has new potatoes (I used large new potatoes, not ball-shaped ones like in the picture in the book):


And it has tomatoes, roasted red bell pepper from a jar, red onion, garlic, olive oil, red wine vinegar (I used balsamic--it probably would have been better with the plain stuff), "a pinch of sugar," parsley, and salt and pepper:


So basically it's cooked potatoes mixed into a raw salad, which, like the raw salsa I made before, gave me terrible onion breath/dreams.
