#26. Nutmeg Eggs on a Green Chile Corn Tortilla with Optional Wilted Spinach and Tomatoes


This is a recipe I invented, and it is healthy, quick and easy to make, and very, very delicious!!

Put a little bit of vegetable oil (or canola or safflower--just NOT a flavorful oil like olive or peanut) into a skillet (I think this is an omelette pan) and turn the heat to medium (or just hotter than you would use to make pancakes):


Toast the green chile corn tortilla(s) (sometimes I like to have one to eat while the eggs are cooking). (I buy these corn, wheat and jalapeno tortillas at a local market, but they come from California, so I'm sure you can get them everywhere. The brand is La Tortilla Factory): 


(I like to turn the tortillas with my fingers even though I always get a little burned. I saw an old lady in Mexico doing it on PBS, and I thought it was cool. You should use a spatula since you're going to need it for the eggs anyway.)

Put the tortilla on a plate, and then crack two eggs into the pan. Wash your hands thoroughly, then sprinkle some ground nutmeg over the eggs (less is more--maybe three light dashes will do it):


(I like to pop the yokes just as the whites begin to firm up. This makes a uniform egg slab. You're using cage free organic eggs, right? Why not?! Don't be such a cheapskate! I live on less than $1,000 a month, and I only buy cage free organic eggs. Okay, the organic part is negotiable, but if you don't buy cage free, I'm going to come to your house and tie you up and cut off your beak!)

If you don't want any vegetables, this is finished when the eggs are. Otherwise, go ahead and put your cooked eggs on top of the tortilla (I love how they're the same size) and roughly chop up some tomatoes and throw them in the pan. Rinse some baby spinach and toss it in too, just for a few minutes (if you want crispier veggies, you can add them to the pan right after turning off the heat):


Finally, dump your spinach and tomatoes on top of the egg:


Like I said in the title, the spinach and tomatoes are optional. Sometimes I top it with just tomatoes. Or this can be a great meal for when you're out of fresh produce entirely--I always have a big flat of eggs from Costco and a bag of tortillas in the fridge, so if I haven't gone shopping in a while, I'll make this. I bet it would be great with cheese too... but don't get carried away, or you won't be able to say that it's healthy anymore!
